MOCAF, commonly known as Modified Cassava Flour, is cassava flour modified by a particular method so that there is a change in the structure. Mocaf has a soft texture and is white in color. It has similar properties to wheat flour, so mocaf is commonly used to substitute for wheat flour. The aroma of this flour is neutral and does not smell like cassava. The taste of mocaf covers the taste of cassava up to 70%. Cassava tubers are washed, dried, ground, processed by modified process, mashed, and then processed for packaging and shipping
